Charro beans with nopal

Ingredients

  • 3 cups cooked pinto beans (with their broth)
  • 2 nopales (cactus paddles), cubed and cooked
  • 3 tomatoes, chopped
  • 1/2 white onion, chopped
  • 3 cloves garlic, minced
  • 2 serrano chiles, minced
  • 1/4 cup cilantro, chopped
  • 1 tbsp oil
  • to taste salt

Method

  1. Cook the nopales in salted water until tender; drain.
  2. Sauté the onion, garlic and chile in oil.
  3. Add the tomato and cook 5 minutes.
  4. Stir in the beans with their broth and the nopales; simmer 15 minutes.
  5. Add the cilantro, adjust salt and serve.

  • 3 tomatoes, chopped
  • 1/2 white onion, chopped
  • 3 cloves garlic, minced
  • 2 serrano chiles, minced
  • 1/4 cup cilantro, chopped
  • to taste salt

Method

  2. Brown the bacon in a pot until it renders its fat.
  3. Add the onion, garlic and chile; sauté.
  4. Stir in the tomato, the beans with their broth and the nopales; simmer 15 minutes.
  5. Add the cilantro, adjust salt and serve.
