Who we are
Like an auntie who cooks well and wants you healthy.
We’re not a scolding nutritionist or a vegan activist. We cook your culture’s food — with more plants, at your pace — so you can care for your health without giving up your sazón.
Platos Verdes was born in a kitchen like yours, when the health of someone we love forced us to change how we cooked — without giving up what we are.
We saw the same old advice: «cut the carbs», «give up your food». For a Mexican family, that feels like giving up who you are. And it rarely lasts.
So we took another path: the transition, not perfection. Start where you are — eating meat most of the time — and take small, tasty steps toward more plants. A carrot taco here. Charro beans without bacon there. Your pozole, with mushrooms. No guilt, no labels, no going vegan unless you want to.
We do it in Spanish and English, because that’s how our people live — between two languages. And everything we say about health is sourced and reviewed by a registered dietitian, because your trust is the one thing we don’t negotiate.
What we believe
Three ideas that guide everything.
The path, not the destination
Every stage — from curious to 100% plants — is a good place to be. We don’t push a single goal; we meet you where you are.
Culture first
Beans, nopal, squash, corn, chiles: our cooking is already rich in plants. We don’t replace your sazón — we honor it.
Honesty and sources
Educational content, not medical advice. Every health claim is cited and reviewed by an RDN. If we can’t back it, we don’t say it.
To be clear
What we are — and what we’re not.
What we are
- A cooking & habits guide for eating more plants, step by step.
- Mexican recipes with transition variants, for your stage and your sazón.
- Educational, bilingual content reviewed by a registered dietitian.
- A no-guilt companion, at your own pace.
What we’re not
- We don’t give medical advice or treat, cure, or reverse diseases.
- We don’t replace your doctor or nutritionist — we complement them.
- We don’t require you to go vegan or give up your food.
- We don’t sell fad diets or quick promises.
A note from the family
We cook for our own, first.
Everything we publish, we’d serve at our own table, to our own people. That’s the only test we care about: that it’s delicious, honest, and helps you take care of yourself without losing what makes you you.
